It is the time again to treasure the tooth of the lion –

The dandelion, taraxacum officinale.
Called so after the french  dent- de – lion,
 tooth of the lion, due to  the shape of its leaves.
You can eat it, juice it, mascerate it, infuse for tea,
 dry it for herbal use and other decoctions, 
it can be a base for wine and beer,
 the roasted root provides a coffee substitute.
It is one of the rather rare herbs
 which provide a cleansing bitterness, 
offering a purifying and stimulating effect
 for liver, kidneys and gallbladder.
Spring is the time to enjoy its benefits!
